A CONTRACT TO COMMIT

 Hi there! This is a contract from me to you. You must be asking to yourself, why a contract? Well, you need to be sure, and I mean 100% sure you want to make a change. This contract is not a promise to me, but a promise to yourself - I bet you will not let yourself down, right?. I advice you to print this contract, only if you are 100% sure, and put it on your fridge, to have that as a constant reminder of what you want for YOU, and the goals you have set for yourself.

What do you really think about losing weight?

Losing weight is not only about exercising, it actually takes a lot more than making that fat cry everyday. To reach this goal, 90% is about nutrition a.k.a DIET. Without a diet, it will not matter how much you exercise, you will never lose those extra pounds. If you are the ones that follows the bad habit of eating too much candy everyday, cereals, lots of oil and butter, sugar, white flour everything, then going to the gym is purely a waste of your time. You will burn calories at the gym, YES, but as soon as you come home and start eating unhealthy food, you will gain those calories that you just burned and even more if you never know when to stop eating.

This is why I always say "When you are ready for a change, then that will be the day when you commit to your body to get healthy." If you do not change what you consume, you will get frustrated, lose patience and firmly believe that diet and exercise never worked and will never work for you. -ERROR- it DOES work, but the key to success is PATIENCE and PERSEVERANCE. We tend to give up on things that don't work magically or overnight. Losing weight takes time, not to mention if you want to tone, takes a lot of work and consistency.

Making a change, being healthy, eating healthy, working out will do great things for you. It will boost your libido and confidence, improve your mood, your skin, you will not feel lethargic anymore; instead, you will feel energized and ready to go. If you maintain a healthy diet, eat clean, you will reach your goal. Love your body every single day of your life, feel proud of how far you have gone and continue this lifestyle forever because it will always make you feel good. Remember, diet is a lifestyle, as soon as you shed those pounds, you cannot go back to eating bad, because you will gain the weight back so quickly and then you gotta start all over again. Think twice about what you are about to eat, STOP, and think about YOU and your GOALS.

HEALTHY RECIPES
Scramble Egg Whites with Veggies

5 eggs whites
Chop peppers, green onions, cherry tomatoes, onions (optional), mushrooms
2 pieces of Turkey Ham
1/2 tbsp Chervil Leaves
Black pepper to taste

Heat up the non-stick pan to a medium low. While it gets hot, crack the eggs and cut the veggies. When the pan is hot enough, place the veggies and the turkey ham on the pan and start cooking them. Drizzle chervil leaves and black pepper on top and mixed. When you notice that the veggies are cooked, put the egg whites in. Let it cook, then scramble them, until cooked. Accompany the egg whites with a piece of whole wheat toast (no butter added) or 1/2 cup of oatmeal.

Protein Pancakes

1/2 cup of oats
1/2 banana, mashed (use a fork)
1 egg white
1/2 tsp cinnamon
1/2 tsp nutmeg
Enough water to create the same consistency of a regular pancake

Heat up the non-stick pan to a medium-low. Combine ingredients until smooth. Then allow to cook as many pancakes as you can get. Enjoy, it is delicious!!

Protein Smoothie Snack

1/2 cup strawberries (or 1 cup strawberries, your choice)
1 scoop of whey protein
1 1/2 cup of water or more, depends on how you like it: thick or smooth
3 ice cubes
1 tbsp hemp seeds

Mix all ingredients into the blender. Enjoy!! Great snack in the mornings!!

Egg whites Omelet

5 eggs whites
Chop peppers, onions, mushrooms, cherry tomatoes, green onions
2 pieces of turkey ham (or ham of your choice)
1/2 tbsp Chervil Leaves
Black pepper to taste

Heat up the non-stick pan to a medium-low heat. Cook the veggies until golden. Place the veggies into a small bowl. Place the egg whites, cover for about 2 minutes or until steam comes out. Then, place the veggies in the middle, then fold to make an omelet. Cover for 2 minutes. Turn the omelet to the other side and let it cook. Then it will be ready to go!

*Note: Every stove is different, be aware of what is your medium low; otherwise, your eggs will burn.

Garlic Chicken with Brown Rice and Baked Vegetables.

1 chicken breast
Chop zucchini, asparagus and broccoli
1/2 cup brown rice
1 tsp garlic powder (unsalted)
Black pepper to taste
1 tsp Sage
1 tsp Tarragon

Brown rice takes 40 minutes to cook; therefore, you have to cook it first. Mince 1 garlic, and turn he heat up to a medium high. Drizzle a little bit of olive oil into the pot, and put the garlic in. Let it cook for 30 seconds, then place the brown rice. Pour 1 cup of water and cover until it boils. When it starts boiling, turn down the heat and let it cook. Turn up the oven to a 400 degrees F. Chop the veggies and season them on a baking sheet on aluminum foil. Drizzle a little bit of olive oil so it doesn't stick. Season the chicken as well. Grab a non-stick pan and turn the heat up to a medium high. When the pan is ready, place the chicken on it and let it sear for 2 minutes. When one minute is down, place the veggies in the oven. When the two minutes are up, turn the chicken to the other side and place the pan in the oven. Let it cook for 18 minutes. And VOILA! everything will be ready on time! Enjoy!!

Crunchy Romaine Toss

1/2 cup raw brown sugar or stevia
1/4 cup cider vinegar
Salt and pepper to taste
2 tbsp butter
1 small head romaine lettuce, torn
1/2 cup chopped pecans
1/2 cup extra virgin oil
2 tsp soy sauce
1 package ramen noodles, broken
1 1/2 cups chopped broccoli
4 green onions, chopped

Whisk together the sugar, oil, vinegar, soy sauce, salt and pepper. Discard seasoning packet from noodles. In a skillet, saute noodles and nuts in butter until golden. In a large bowl, combine noodles, broccoli, romaine, and onions. Just before serving, toss with dressing.

Easy Chicken Caesar Salad (My style)

1 chicken breast
Salt and pepper to taste
1/4 tsp paprika
1/4 tsp chili powder
1/4 tsp garlic powder
3 cups romaine lettuce
2 whole wheat pieces or bread, toasted

Preheat oven 400 degrees F. Grab a non-stick pan and turn it up to a medium high heat. When the oven is ready, place the chicken on the pan and let it sear for 2 minutes. After it is done, turn it to the other side and place the pan in the oven for 18 minutes. While the chicken is cooking, chop the romaine lettuce and toast the bread. Cut the toasted bread into little squares. When chicken is ready, cut it in long pieces. Then mix it all and enjoy!!

Baked Tomatoes

4 large ripe tomatoes, sliced 1/4 inch thick
1/8 cup grated Parmesan cheese
1 clove garlic, minced (you can use garlic powder instead)
2 sprigs fresh parsley, chopped
2 sprigs fresh cilantro, minced
salt and pepper to taste
1/2 tsp dried oregano
1 tbsp olive oil

Preheat oven 400 degrees F. Place tomatoes on a baking sheet. Sprinkle with cheese, garlic, salt, pepper, parsley, cilantro and oregano. Drizzle with olive oil. Bake for 20 minutes.

Tuna on whole wheat bread

1 canned tuna
3 sprigs green onions, chopped
1/2 tsp mustard
1 tsp Hellmann's olive oil mayonnaise
1/4 tsp chili powder
1/4 tsp paprika
Pepper to taste
2 pieces of whole wheat bread
1/2 tomato, cut 4 slices

Mash the tuna with a fork, mix green onions, chili powder, paprika, pepper, mustard and mayonnaise. After mixing it all, cover both pieces of bread with tuna.Then place two slices of tomato on top of each bread. Press broil on high, and place them in the oven. Let it cook for 5 minutes. If you want it more toasted, let it cook for longer. Keep checking them, you don't want them burned. Enjoy!

Spinach Egg Whites Omelet

5 egg whites
8 sprigs Spinach
1/2 pepper (any color you want)
2 sprigs green onion
1 or 2 mushrooms

Heat up the non-stick pan to a medium-low heat. Cook the veggies until golden. Place the veggies into a small bowl. Place the egg whites, cover for about 2 minutes or until steam comes out. Then, place the veggies in the middle, then fold to make an omelet. Cover for 2 minutes. Turn the omelet to the other side and let it cook. Then it will be ready to go!

Motivational Story of Anapaola Rincon                                           

This is a brief story of when my life changed and I decided to lose 26 kilos.

Hello everyone, my name is Anapaola Rincon Echeto, I am 22 years old. Since I was a kid I was always overweight, I was the "fatty girl of the house." For some people I always looked good for my age, everybody said I was so pretty no matter how fat I was. I was only a kid; however, as I was growing up, insecurities about my body and such started growing in me.

I remember clearly that when I was 10 years old I was size 14 and that's when my mom started worrying about my weight. I was always the kind of girl who would prefer to eat three ice creams instead of eating healthy food. I always ate bad, I remember. Years passed by, and I reached puberty, teenage years and I was overweight. Some days I would wake up and worry about how I looked, and how fat I was, and some days I would get up and start my day without thinking or caring about it at all. Sometimes I would say "whatever" to how overweight I was, and the reason why I felt that way was because I never had an issue socializing, and people always complimented me about how pretty I was, so that was a self-esteem booster right there for me.

When I turned 15 years old, I decided to start my very first diet. Because of how bad I ate and the amount of weight I had in me; I decided to take this step just because of the fact that I was developing health issues such a gastritis, colon inflammation and so on. I started exercising and eating healthy, but that didn't last very long because as soon as I lost 3 kilos I stopped this routine, I gave it up. Time went by and I was still overweight and on my way to University.

At 18 years old, I weighted 88 kilos and at that very moment is when I realized that I looked like a "whale," I would look at myself in the mirror and the only thing I saw was a deformed and fat person. Not only I had emotional issues about the way I looked, but I also had issues with my hormones, I had hormone imbalance due to my weight.  One day I went to the gynecologist, and the only thing she said was "Ana, your problem is that you are 19 years old and you are 26 kilos overweight. You are beautiful, what you are doing is not benefiting you. Don't you see the damage you are causing to your body and to yourself?." I was then referred to a nutritionist and I started my second diet in which I followed strictly. I started working out again; I would go to this huge park and walk or jog around it twice, and I joined two classes such as Tae Box. I gave up what I loved the most, candy, chocolate and pop; my nutritionist made it very clear that I had to reach my ideal weight, which was 59 - 64 kilos. For me was impossible to lose that much so fast or just to maintain my commitment to change my eating habits, so 5 months later I lost 12 kilos, meaning I was weighting 76 kilos, and again...I quit. I forgot about my diet, I really felt like I couldn't do it anymore; therefore, I gained 3 more kilos back, so I was a 19 year old girl weighting 79 kilos. It is important though, to highlight the fact that I am not tall, my height is 1.64 cm and I should be weighting around 57 - 62 kilos.

When I was close to my 20's, I was weighting 79 kilos still, but my family and I went through the most difficult time in our lives, my mom was diagnosed with stomach cancer and she passed away 3 months later. During this period of time, I lost 4 kilos due to the distress and the loss of my mom, which I loved dearly. This was a wake up call for me, it was important to me to get healthy, to start fresh, so I was paying close attention to my body and my diet and I lost 13 kilos. My hormone imbalance was no longer imbalanced, I didn't feel fat or deformed anymore, but I wasn't happy. I started trying out some clothes and I felt fat, it just didn't fit right. I would look at my legs before and see how fat they were, and in that moment I saw that they slimmed down quite a lot, but then I asked myself..."Why can't I do this?" In reality what really held me back from reaching my goals was myself, I would cheat my body a thousand times. You are your own enemy.

At 21 years old, I went for another consult to see where I was at in terms of my body weight and such. To my surprise, my hormones were imbalanced again and they diagnosed me with Insulin Resistant. I cried so much, I cried a lot actually, I said to myself "What did I get myself into? I'm basically diabetic." Then started understanding that concept a whole lot, I realized that a lot of overweight people would go through this because they live sedentary lives just like me and they would have really bad nutrition for long periods of time. What happens in people suffering from this syndrome is that glucose doesn't process very well, which generates insulin resistant resulting in an elevated sugar production. This large amount of sugar production would restrain you from losing weight and gives you hunger attacks with no control whatsoever. Again, I was referred to a nutritionist, and this time I was very determined to do anything in my power to lose the extra weight and remain healthy. I was prescribed with 50/500 mg of galvus met, one after every breakfast, along with a low fat diet and exercise. This time I had to follow this diet and exercise routine strictly, the idea was to reach that ideal weight approximately around 57 - 62 kilos.

On February 23 of 2011, my diet started changing, with an exercise routine of walking or jogging around that park I mentioned earlier, and I joined two classes such as Tae Box. On August of that same year, my weight went down to 65 kilos, when I saw that number on the scale I was so proud of myself, I said "I DID IT, I MADE IT. THE PATH I HAD TO WALK ON WAS REALLY TOUGH, TIRING AND SLOW, BUT I MADE IT." It wasn't easy, there were days I would cry desperately, I desired the best foods, foods that taste so good, but are really bad for your body. I just wanted to eat the whole world in one sit. I wished to lose all that weight in a month, but every time I would go on the scale I would only lose grams, it got tedious at some point, it was hard. I spent 3 months not knowing how a candy tasted, including the ones made with Splenda. I had to understand that this huge change, this long process wasn't only for my looks, but primarily for my health. My life, my body, my overall health was at risk; diabetes runs in my family, it is in my genetics, and it terrifies me to only think about me developing it.

I'm almost 23 years old and I PROUDLY weight 62 kilos, but this hasn't ended. I have new goals, I started another diet to lose 5 more kilos and reach my perfect weight which is 57 kilos. I decided to be better with my nutrition, to control my food intake A.K.A portion control; also, decided to get a membership at the gym as well. I'm telling YOU, it is not easy, and HEY! at the end of the day I love food, yes the food that you also LOVE, the one that makes you fat, I won't sit here and lie to you though; sometimes I do treat myself, I eat what I LOVE such as cookies, chocolate and candy, but with limitations of course. Believe me I try really hard not to treat myself during the week, instead I pick a day during the weekend to treat myself freely, but always limiting the amount, I don't drown in chips, chocolate and candy in a day, I do enjoy having a bite of everything I like though. Another thing is that it is really hard to maintain your weight, you have to control yourself, and control those cravings for sugar and think about your goals and what you want for yourself.

Like I said before, my goal is to weight 57 kilos, I think losing those extra 5 kilos will look very good on me. Even though, right now it is really hard to get back to my healthy regimen, I would give my all in this new challenge I put myself into to proudly tell you my next story of success. I'm telling you again, I DID IT so CAN YOU! It is definitely the best feeling in the world, to see yourself in the mirror and tell yourself "Damn I look so good, I look beautiful. Everything fits, everything is in the right place." It is PRICELESS!

People you have to understand that even though it hurts, it's tough, it is worthy at the end. You have to try it, you have to do it for YOU. I decided to do this for myself, primarily for my health, then my body and my looks. I gave love to my body because it was sick from all the junk I consumed, for all those years of not exercising and eating right.

My advice to you is TRY IT. Believe me you will feel better, you will love yourself every single day of your life.

MY FAVORITE HEALTHY SNACKS

Citrus-Berry Parfait

1/4 cup diced orange sections
1/2 cup fresh blueberries and raspberries
3/4 cup non-fat granola
1 tbsp honey (optional)

Per serving:  326 cal
                     2 g fat (0 g sat)
                     62 g carbs
                     5 g fiber
                     138 mg sodium
                     18 g protein

Berry and Yogurt Smoothie

7oz (200g) raspberries
7oz (200g) blackberries
6 heaping tbsp (90ml) low-fat plain yogurt
1/4 cups (300ml) milk
3-4 tbsp (45-60ml) confectioners' sugar or maple syrup, to taste

Serves 4 - 6

Cinnamon Vanilla Shake

2 scoops Whey Protein
2 1/2 tsp ground cinnamon
6 ice cubes 
8 oz water

Wild Berry Boost

1 scoop Whey Protein
4 raspberries
4 strawberries
10 blueberries
8 oz water
1/2 cup ice cubes

Banana Nut Pancake

1 cup whole wheat flour
2 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon
1 large banana (ripe), mashed
1 cup skim milk or almond milk (no sugar added)
3 large egg whites
2 tsp oil
1 tsp vanilla
2 tbsp chopped walnuts or almonds (optional)

Mix dry and wet ingredients separately; then mix them all together.

Whole Wheat Pancakes

2 cups whole wheat flour
4 1/2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
2 tsp brown sugar or stevia
2 large egg whites
2 cups plus 2 tbsp skim milk or almond milk (no sugar added)
2 tsp vanilla

Mix dry and wet ingredients separately; then mix them all together. 

Mayo-less Tuna Salad 

5 oz canned albacore tuna, drained
1 tbsp capers, drained
1 tbsp extra virgin oil
1 tbsp red wine vinegar 
2 cups arugula
1 cup cooked whole wheat pasta
Fresh black pepper
5 oz fresh shaved parmesan cheese

Delicious Creamy Cauliflower Puree

1 medium head cauliflower, cut into florets
4 cloves crushed garlic
1/3 cup 1% buttermilk
salt & pepper to taste
1 tbsp light butter

Steam or boil cauliflower and garlic until soft. Drain. Add buttermilk, light butter, salt and pepper. Puree with a hand blender.

What to do when you already set your goal and committed to change?

Be vigilant: Be aware that if you committed to change, lose weight and maintain it, the you have to keep that promise to yourself to be consistent. If you lose a number of pounds and then gain some back, then it is not gonna work for you. It is like playing yo-yo, goes and then comes back again. Do not do it that way, it is bad for your body, your internal organs, and overall health. Do not cheat your body, and your mind. BE STRONG!

Be flexible: Are you scared of getting bored of the same diet? switch it up. You will be successful if you dare to change your diet to spice it up and not to lose your motivation.

Be active: Losing weight is not only about dieting, it is about exercising as well.  Exercising will help you with your weight loss. You will burn all those extra calories, make that fat cry and build muscle. Also, exercising will change you mentally, physically and emotionally. Believe me, I am always in an awesome mood after a good workout.

Be optimistic: Did you fail today? so does that mean you are giving up forever? Really? Are you sure? Absolutely NOT. Do no quit just because you failed at something, keep trying and try HARDER. This is about YOU, about your body, about your emotions, about your health. Be better everyday, be stronger, feel good about yourself. BE PROUD!

Be realistic: Make sure that you have a healthy diet you can stick with. Think of what you are doing and what you are consuming everyday to be healthy. You have to tell yourself "Ok this is my diet, I will switch it up from time to time so I don't get bored, but I have to make sure I stick to this for the rest of my life." Diet is not temporary, it is a lifestyle to keep your overall health balanced.

Be patient: Don't try to lose weight in a week by starving yourself. Believe me, if you starve for a day or two, the next day you are going to overeat because that is how hungry you feel. You won't lose weight that way, I mean you may lose some, but is it a healthy way? Absolutely NOT. What is recommended is to reduce your weight by approximately 10% over 6 months, so don't get too crazy or don't quit if you don't see results right away. Be patient with yourself, and your body. Also, don't get frustrated if a friend of yours has been dieting and exercising at the same time as you and she is losing weight faster than you are. Remember WE ARE ALL DIFFERENT, we don't work the same way as the person beside you.

Be supported: Don't be shy, talk to others, at the gym or talk to friends who have successfully lost weight. By this I mean, you will get motivated even more, you will see that they worked hard to reach their goals, why can't you? Make sure you have a support system, and the most important one is yourself, of course.

Be analytical: Realize the difference between mood swings and hunger. When you are emotional you tend to crave sugar and overeat it. Make sure you realize that you are feeling some emotions and that you control your cravings by eating healthier snacks like fruit, nuts, yogurt, etc. Make sure you manage both separately.
